- 2 cups of Basmati rice
- 3 raw eggs
- 1/4 spoon ajinomoto
- 1 spoon soya sauce
- 5-6 spring onions
- 2 capsicum
- 2 spoon Olive oil
- 1 spoon Salt
Step 1 – Cooking the rice
Take the 2 cups of Basmati rice for cooking. Wash them in water for 2 to 3 times and then start cooking the rice. Click here to know the complete procedure about how to cooking rice. After you have cooked the rice, keep it aside. You may add some edible orange color if you like so.
Preparing the vegetables
- Cut spring onion and capsicum into small pieces. Take a deep frying pan and add olive oil to it. Start heating the pan and when the oil is hot enough, put the spring onion into it and stir fry for 5 minutes.
- Now put the capsicum in it and continue stir frying it for another 5 minutes. You can use capsicums of different color like the red, yellow and green capsicum to give more colors to your Egg rice.
- Now crack open the eggs and collect the liquid with the yellow yolk in a bowl and mix them properly. Now put this egg mixture in the frying pan. Add salt to it. Keep stirring the mixture for another 5 minutes.
- Switch off the flame and keep the pan aside.

Preparing the rice
- In another pan, mix the cooked rice, Soya sauce, ajinomoto and a pinch of salt.
- Start heating the pan and add oil into it. Fry the mixture for 5 minutes.
Final mixture and serving
After the frying is done, mix everything well, and stir it with your spatula. Now take a plate of your choice (preferably a steel plate or a white porcelain plate) and add the egg rice by spreading it evenly over the plate. You can prepare a nice salad to eat with the egg rice. You could also prepare a nice cool drink or get some carbonated drinks to have with the Egg rice.
